It's also difficult to operate a restaurant in today's times of social distancing.

Burban kitchen has been open since october and has already faced many ups and downs.

Kristian stand up: gonzales says he plans to use this barn to expand his dining area.

Gonzales: the plan is to activate the barn and have burban cater to the barn and we can have tables that are spaced up 10 feet and seat up to 100 people if we wanted to.

We have also bought a beer cart to offer the barn for social events when that's legally possible.

He says the restaurant's menu will also be getting a makeover.

Gonzales: we are moving to a new model with the barn and open seating, more casual dining, and i think that's the big takeaway is that we will move towards a new casual dining concept and chef ann leon will look for a new opportunity and her new concept.

It's going to be exciting to see people seated and spaced apart and enjoying the barn and music and food.

Kristian: gonzales says we could see this open in 4 to 6 weeks.
