Speaker 1: i'm here with whitney allen with united healthcare and joshua ball with soar.

Thank you both so much for coming.

I appreciate you guys being here.

Speaker 1: joshua, go ahead and tell us what soar is for people who maybe don't know.

Joshua ball: so soar stands for shaping our appalachian region.

We were formed in 2013 as essentially a backbone organization that are bringing together partners all throughout appalachia kentucky, which is 54 of kentucky's 120 counties, to collectively come together, build consensus around a regional plan and implement that plan to drive transformation across the region.

Speaker 1: how are you guys working together, whitney, to to do this?

Whitney allen: so united healthcare supports whole person care and locally supported models of care and that's kind of where our partnership came in with soar looking to improve the counties in appalachia and working to improve the quality of life of people living there and with united healthcare's mission to help people live healthier lives, to help make the healthcare system work better for everyone, it just seemed like a natural partnership to help fund some of the work that they're doing, especially around economic development, improving businesses and healthcare industry.

Speaker 1: joshua, what's the biggest challenge you guys face?

Joshua ball: you know, it's really an opportunity because we have been able through our blueprint for the future of appalachia to bring a healthy communities and addressing the health disparities across the region, to the table, as part of the conversation as we talk about community and economic development across the region.

Joshua ball: i think that's important because we all aspire for healthy economies, whether we're rural or even urban and we know that healthy economies are built by healthy communities and if we can address those things simultaneously with all the other factors of our blueprint, we truly believe that we can achieve outcomes that are just unimaginable and really we're starting to see those types of things take place through the partnerships, like with united healthcare.

Allison davis: welcome back to midday kentucky.

Chef allison davis here in the wild thyme kitchen of course.

And this week i am focusing on my favorite meal of the day and that is breakfast.

I like breakfast for dinner at home.

This is just one of those things that you get to splurge on on the weekend sometimes.

And sometimes people, i can't tell you how many people come in and say, "how do you get a good pancake?"

And so that's what we're making today is how we get a good fluffy, dense, beautiful pancake.

And not just a plain pancake.

I mean, come on.

We're doing, working on taking it up a notch.

I think about my dad's favorite sandwich, which is peanut butter and banana.

And so that kind of got me thinking about this pancake and one of our camera guys says, "no matter what i do, i have to throw some meat in it."

I'm putting in some bacon.

We're doing bacon, banana, and peanut butter pancakes today.

Get ready.

The first thing we're going to do is we're going to start with our dry ingredients.

I have just some all purpose flour and i believe this is two cups of all purpose flour.

We're going to add in a quarter cup of sugar.

And then we have our baking powder and salt, just a pinch of salt and about four teaspoons of baking powder.

And then we have, let's see, we are going to go in with one and a half cups of milk.

This is all of our dry ingredients.

We'll just kind of whisk this together and then we're going to make a little well in the center.
