Mexico City: Huitaloche Quesadilla

Sometimes known as “corn smut” or the “Mexican truffle,” Huitlacoche is as Mexican as taco al pastor.

What starts as a fungus that grows on organic, untreated corn, winds up as a delicious filler for tacos and quesadillas.

Head over to the corner of Niza and Liverpool in Mexico City, where Nicolasa Aguilar Martinez cooks quesadillas from a fungus she finds tastier than meat.

Location: Calle de Niza 65 Juárez 06600 Juárez, CDMX Mexico
